You can start by making the syrup. Combine sugar, mint, and 2 tablespoons of water in a medium saucepan over medium heat. When it boils, remove from the heat and let it steep for 15 minutes. Strain into a measuring cup and remove as much of the extract by pressing the mint. Try to get as much as ¼ cup.

In a medium saucepan, combine the cranberry juice, ¾ cup sugar, cornstarch, salt, and 2 cups of strawberries. Use a potato masher to gently mash the strawberries into the mixture.
