Here are three of the most simple desserts that you can make with strawberries.

Chocolate-Covered Strawberries

For this dessert, you will need 8 ounces of semisweet chocolate, a pound of large strawberries (washed and dried), and ⅓ cup of finely chopped pistachios (or any nuts).To start, you need to place the chocolate in a bowl that is over a saucepan of simmering water. Stir the chocolate until it melts. Once melted, you can remove it from the heat. Dip each strawberry in the melted chocolate and then sprinkle with your chosen nuts. Place it on a baking sheet lined with waxed paper. Chill for 15 minutes but no more than an hour. You can then serve it.

Strawberries with Mint Whipped Cream

This is another one of the simple strawberry desserts that you can make. You will need ¼ cup sugar, 2 cups (packed) of coarsely chopped mint leaves and stems, 1 cup heavy cream, and 1 quart of strawberries that are thinly sliced and hulled.

You can start by making the syrup. Combine sugar, mint, and 2 tablespoons of water in a medium saucepan over medium heat. When it boils, remove from the heat and let it steep for 15 minutes. Strain into a measuring cup and remove as much of the extract by pressing the mint. Try to get as much as ¼ cup.

In a large bowl, whip the cream until stiff peaks form. Fold in the ¼ cup syrup.

In the dessert container, layer the strawberries and cream. Start by spooning the strawberry and then the cream. Top the dessert with a mint sprig.

Strawberry Icebox Pie

This is a bit more complex compared to the other strawberry desserts. You will need 10 graham crackers, 1 cup sugar, 5 tablespoons of melted unsalted butter. ½ cup unsweetened cranberry juice, 2 quarts strawberries (thinly sliced and hulled), ¼ cup cornstarch, ¼ teaspoon salt, and ½ cup heavy cream.

Before you start, preheat the oven to 350 degrees. Then, get a food processor and blend the graham crackers with 2 tablespoons of sugar. Once it is finely ground, add butter and pulse until you get moistened crumbs. Transfer the mixture into the bottom of a 9-inch pie plate. Bake for 12 to 14 minutes until the crust is lightly browned. Place it on a wire rack to cool.

In a medium saucepan, combine the cranberry juice, ¾ cup sugar, cornstarch, salt, and 2 cups of strawberries. Use a potato masher to gently mash the strawberries into the mixture. Bring it to a boil and reduce the heat to a simmer. Stir the mixture frequently as it is cooking. Wait until it thickens – this will take around 1 minute. Remove from the heat and let it cool. Stir the remaining strawberries. Pour the mixture into the pie crust (make sure it is cooled). Refrigerate for at least 4 hours to a day to set.

Before serving beat the cream in a large bowl until soft peaks form. Sprinkle 2 tablespoons of sugar over the cream and continue beating it. Spread the whipped cream over the pie. Garnish with whole strawberries.
